Baked Pork chops marinated in fresh garden herbs with Zucchini and dried

Base
Sauce
3 tablespoons extra-virgin olive oil
1 Large onion, peeled, trimmed, and minced
6 garlic cloves, minced
2 pounds tomatoes, pureed
1 cup homemade Chicken Stock
6 to 8 fresh basil leaves, washed and dried
6 tablespoons (3/4 stick) unsalted butter, cut into small pieces
Sea salt and freshly ground black pepper
1)
In a saucepan, heat the olive oil and saute the onion until browned. Add
the rest of the ingredients and allow to cook for 2 hours.
2) Chiffonade the basil leaves and add to the sauce.
3) Turn off the heat and add the butter and salt and pepper
Main
Sauce
1 green pepper, 1 red pepper, 1 purple pepper
1 Large onion, peeled, trimmed, and minced
1 package of regular mushrooms
1 package of portabella
1 hand full of dried shitakes
1 hand full of dried porchinis
1 package of crimini
2 large zucchinis
2 large yellow squash
6 cloves of garlic
1 large handful of each; Basil, thyme, lemon thyme, marjoram, rosemary
1 small handful of each; tarragon, garlic Chives, basil
1 lb of hamburger (optional)
6 cups of tomato sauce
3 tablespoons extra-virgin olive oil
1 tablespoon of sugar
Balsamic vinegar to taste

In a saucepan, heat the olive oil and saute the onion and garlic until
browned. Add the rest of the ingredients and allow to cook for 2 hours.
2) Chiffonade the small handful basil leaves and add to the sauce.
3) Turn off the heat and add balsamic vinegar and salt and pepper
